What are the best off-the-beaten-path excursions in Greece?

Going to Greece in mid September. Athens, Mykonos, Santorini and Crete. Hotels and travel booked but i am looking for outside the usual excursions, must try restaurants etc. Typical weather so what to pack any helpful hints are appreciated. Thanks! Or ευχαριστώ.

Favourite meals we had on Santorini were at Metaxi Mas and Katharos Lounge (best sangria I've ever had at Katharos). Probably worth having a reservation for both of them from what I remember.
Favourite meal on Crete (we stayed in Chania) was at La Bodega.

When on Santorini last September, we stayed at the Anemomilos hotel in Oia.. highly recommend, and their restaurant was superb with great service and beautiful views. We took a taxi for only 15 Euros to Ammoudi which was the highlight of our stay, stunning location right at the bottom on the waterfront. I can't remember the name of the Fish restaurant, but it was amazing with whole fish on display. We chose a sea bass which was then charcoal grilled and brought to our table... the best fish we have ever eaten. It was filleted by the waiter at our table. Stunning views from our table of the beautiful Santorini sunset. When we were ready to leave the waiter called a cab for the ride back up the steep road again. Also recommend the sunset dinner cruise on a cattermaran, swimming in the sea, seafood bbq on board, sunset cocktails overlooking the volcano. Fabulous. The weather was in the high 20s for our 10 day stay, I took sweaters and did not need them. Wear sensible flat shoes as quite Rocky and hilly.
