Hanalei Bay! There is a tiki bar there called Tahiti Nui - good pizza and drinks. Sometimes they have live hawaiian music in the evenings.
And hiking on the (Napili Coast) Kalalau Trail.

These are the places that I visited and I am so happy we did.
We went to Waimea Canyon, take your time getting up there, the roads are steep curvy and narrow. All the way to the top there are numerous view points, all worth a stop, and there are hikes if you're into that too.
There is a coffee plantation called Kauai coffee company I think close to princeville, there is a free tour and free coffee tasting of about 20 different coffees.
Shipwreck beach, nice spot for a walk. Down the road was the "sink hole" (Makauwahind cave) just beyond that there was a Tortoise sanctuary!!!! For me 100% worth the hike/walk down to check those both out.
Poipu beach is popular.
Hanalei bay, was amazing.
There is a little church Wai'oil' Hui'ia that was cute. Hanalie Pier is really nice, great views and there is a big drive up beach there.
