What activities should I do on the mainland, Ambergris Caye, and Caye Caulker in Belize?

Really liked Caye Caulker, but some great sights in the interior as well. Rental cars are somewhat pricey in Belize, but worth it, as some places are tough to get to without one in the interior.
Unless things have changed drastically in 2 years, I don't think you'd have trouble booking on the fly. We were there during what should have been very high season in February (and over Presidents Day long weekend), and kept wondering where the other tourists were. I think Belize is still off the North American tourist radar for the most part.

great timing, I'm looking into the exact same thing! So far I came up with a few days in the San Ignacio area (maybe a side trip to Tikal, Guatemala), a few days in either Placencia or Hopkins and I can't seem to make up my mind on what island to go: Ambergris Caye or Caye Caulker. When are you thinking of going?

We stayed in Belize City and booked a couple of day trips to see the Mayan Ruins from there. People from Belize who live outside of Belize City kept warning us of how dangerous Belize City was. We stayed in a B&B there, and the neighborhood around it seemed safe to us. (We were told the president lived a block away which might be why.) We did the cave tubing when we were in Belize for a cruise stop and enjoyed it. From Belize City, we flew to San Pedro for a week. We stayed at X'Tan Ha which is 7 miles from San Pedro. It had a great beach, but taking the water taxi to town and back adds up fast ($18 US for a round trip for one person). But I personally wouldn't have wanted to stay in San Pedro as it's busier and more touristy. We went to Caye Calker for a day, and it's a lot more hippy. If you're a resort person, I don't think you'd want to stay there. The must dos for me were Shark Ray Alley and Hol Chan Marine Reserve. From our resort at X'Tan Ha, we could sea kayak out to Mexico Rocks, tie up the kayak, and snorkel which was great. You can't get the coral reef from the shore by swimming.

Almost every tour company does a half day Shark Ray Alley and Hol Chan Marine Reserve tour. And if you want to purchase a snorkel set here (you can rent there), Atmosphere has a good one on sale right now.
