I stayed in Lauterbrunnen when I went hiking there a few years ago. One of the hikes I did was the Faulhorn. I think it's around 6 hours. You just take the train to Schyinge Platte station to start.
I can't say it's 'non-touristy' as it's probably one of the 'must do' hikes in the area, but I don't remember the trail being crowded. Although I was there in September.

- If you zoom into the area around Interlaken, you'll see the icon for Schyinge Platte train station (Of the 3 stations shown, it's the middle one). The hiker icon to the NE is the Faulhorn hike.
- If you scroll to the east, you'll see some recommended day hikes that are likely to be less touristy
- If you're up for something pretty thrilling, look into the Via Faretta hike in Murren. At $25 to rent the harness, it's definitely the cheapest adrenaline rush I've ever had. https://www.tripadvisor.ca/Attraction_Review-g188084...
