I would recommend you visit Matera, and hire a guide! It was a highlight of our trip, for sure! Here is some info! https://www.neverendingvoyage.com/sassi-matera-italy/

Are you doing a cycling tour through there? Because that's what we did and the places you are staying were almost our exact route. It's a beautiful region and I agree that Matera was a highlight. There honestly wasn't a place we stopped where the food and wine wasn't incredible. The Trulli of Alberobello are lovely as well.

You can stay in a Trulli. Available through Airbnb.

1) stay in a Trulli in Alberobello.
2) stay in Monopoli for a few nights. I would stay here before Bari. Hidden beaches everywhere!!
3) polignano a mare for day also
(All in the same area)

We are not cycling but are SO looking forward to our trip. Have a vehicle so just want to explore, walk/hike and eat! Sincere thanks for your input

Pietrapertosa
Zip line from one village to another and back again. Check on their schedule to time it when they're open when you're there.

If you're pressed for time skip Ostuni, its nice but a little underwhelming. Try to find time to drive / cycle through the old olive groves south of Alberbello.
