I tried dogsledding years ago, back then they provided clothing and someone to “guide” the dogs. Soooo fun and interesting.

That’s my hometown! February is a cold cold month to go, but head out to the Aurora Village, the museum is really nice, the ice road is fun, Ingraham Trail. There is the Snowking Castle, skidoo/dogsled tours, ice fishing. There are various lodges in the area if you want to get even more remote, such as Blachford Lake Lodge.

I second dog sledding. It was -39, but it was easily one of the best experiences of my life. Being on the trails with a team of dogs was incredible. I recommend Alayuk. Also definitely eat breakfast at the Burnt Toast Cafe. If Sourdoughnuts is doing a pop up shop while you’re there, definitely check them out. Great donuts with unique flavours.
