Too late now if you've already booked. If you haven't booked, then book an open jaw ticket. Some airlines encourage stopovers, singapore airlines in Singapore, Fiji in Nadi, japan airlines, I think Icelandic Air as well and a few others. A great way to promote tourism. Stopovers are free or very cheap (ie. $100).

Sorry this is the first time I've done something like this. How exactly do I book a open jaw ticket? For example on kayak I want to go to Tokyo and there is a cheap ticket with a layover in Taiwan which I also want to visit. How exactly do I stay in Taiwan for longer?

You just do a multi-city search, like this:
http://www.ca.kayak.com/flights?mc=y
(most airfare search engines have this, usually under 'multi city', listed beside roundtrip and one way)
And then search for:
Vancouver to Taiwan
Taiwan to Tokyo
Tokyo to Vancouver
The thing is though, the price can change drastically. When it stays the same as the roundtrip price it's usually because the airline(s) involved are essentially allowing a free stopover (often in their hub city). Such as how klm usually allows a free stop in Amsterdam.
It's much more common for the multiple stop ticket to be more expensive than the 'roundtrip version', even when all the same cities and stops are involved.
