There are tons of hotel options both on and off Disneyland (some of which are partners and have free shuttles to and from the park, etc.) As for skipping lines, that depends which park tickets you buy! i recommend staying at homewood suites right across from the convention center. Its a newer hotel, free breakfast and snacks in afternoon and its located right next to goofys parking lot so you can take the shuttle for free right to the main entrance.

We always stay at the days inn Anaheim! It’s a 10 min walk to Disney and it’s great full breakfast and great pool and gift shop. Cheap too

I’d go off season, google it and they have calendars to the best time of year to go. Last year I went the week prior to American Thanksgiving and no line ups
