There are lots of cheap, direct round-trip flights from Vancouver to Hong Kong. Then you can do a short haul airline like HK Express from hong Kong to chiang Mai. This might be cheaper than if you try to book all the way to Thailand and back, on 1 airline

cathay pacific, Korean Air, and some of the mainland Chinese airlines have routes that only involve 1 stop from Vancouver to Chiang Mai. Personally, I try to avoid traveling through mainland China due to unfavourable past experiences. As for a cathay pacific and Korean Air, I've enjoyed flying both airlines. As for flying times, the flight to HK is a bit longer than to Seoul (13 hours vs. 11 hours), but then your connecting flight will be shorter (3 hours vs. 5 hours).
