Bucerias is a cute town close by. You can have lunch on the beach and hang out on their lounge chairs as long as you want. Bus trip to Sayulita, cheap massage on the beach there. Bus in to Puerto Vallarta.

Rhythms of the night. You take a boat to an island that has no electricity and is only lit up by candlelit to have ocean side dinner and watch a show in the middle of a jungle similar to a cirque show

Rent some kayaks and just go out in bay.. you likely will be able to kayak with the dolphins.. we did twice it was awesome
