Can You Recommend Non-Touristy Cities in Mexico?

Hey all... so planning on heading to Mexico to start my trip next year. Any advice? What cities should I see that aren't resort/surfing/party towns? How long should I spend in each?
Right now I have Mexico City, Oaxaca and San Cristóbal de las Casas on my list.

We spend a month every February in a little town called La Manzanilla 45 minutes north of the Manzanillo airport. Chill place. Good food best west coast beach. No resorts or hotels

Oaxaca is amazing. I used to work for a coffee company that grew its beans there. The villages in the mountains are great. The locals are amazing. The coffee company is called Frog Friendly Wild Coffee if your interested in learning more about the region. The owner is Karla, she spent a lot of time there and I'm sure she would love to help. We love the caribbean side. Going in Dec to isla mujures little island off cancun 20 min ferry ride. Beautiful beaches, golf cart around island. Quieter. We dont do all inc. as short walk to town with many nice restaurants!
