Where to go in Japan for hiking and hot springs?

Love some advice for Japan.
Will be there for almost 3 weeks in May with my husband and kids (3 years old & 17 months old). My husband and I have already been to Japan about 5 years ago so hoping to do less major cities. I'm really interested in hiking and he's interested in hot springs/history. This is what we are thinking but open to suggestions or other places to go.

I rented a car from Rentalcars.com, it wasn't expensive. I picked it up at Mishima train station, which is on the line from Tokyo to Kyoto. The guy at the rental place set the GPS to English. I drove around the Izu peninsula, which is beautiful. Stayed at 2 differen Onsen, Zen no Yu in Kawazu, and another in Rendaji near Shimoda. Both were very traditional Japanese with a mattress on the floor and a pillow stuffed with corn husks. I slept like a log! Paid about $80 a night at each. Lots of fantastic walks around the coastline.

Your kids are young enough to travel for free on the train, so I would recommend that option. Nikko is quite nice, with the better hiking, onsen and waterfalls found in Oku-Nikko, and enough variety that there are suitable routes even for younger children. Tobu offers a handy pass covering bus and train for the region (https://tobutoptours.com/en/nikko-all-area-pass.html). I would combine this with a one-week JR pass covering Kanazawa and the Izu peninsula.
