Knott's Berry Farm is usually not very crowded on weekdays, pretty inexpensive and has some great rides.

Been there twice, both times it was almost like we had the park to ourselves. Hardly any lineups.

Nothing beats Disneyland. I would spend 5 days at Disneyland and California adventure and one day at Universal if I had 7 days. If I had more time I would perhaps do the beach during the day and Medieval Times in the evening one day. I've never been to the Tar Pits though it sounds cool.
