Look for airbnb downtown Sydney or Manly Beach area,Take the walk over the top of the Harbour Bridge.Lots of pubs for pub crawls,good bar around the base of the Opera house.Surfers Paradise on the gold coast is over rated and expensive ,go one day,Tweed Heads and Collangatta are better areas.If your going that far go to Noosa on the Sunshine coast and Airlie Beach on the Great Barrier Reef.

When are you going? I stumbled up on the Sculpture by the Sea walk in the Bondi Beach area when I was there a number of years ago and it was a delightfully unexpected walk. I highly recommend it if you're going to be there when it's on: https://sculpturebythesea.com/bondi/

Manly Beach is an awesome place to visit, it feels like a sleepy surfer town but is a short ferry ride from Sydney CBD.
