I think you're going to have an amazing time. I hear food is just absolutely amazing! Street foods are ridiculously cheap, tasty, and abundant.

Jeju-do is my favourite part of Korea. If it hasn't changed too much in 20 years, you'll find it quite beautiful. My friend and I went to Udo where we met the 'mermaids' my Korean friends had told us about. I wrote a picture book about it called Mermaids. At Busan we visited the UN cemetery on, it fluked out, their Memorial Day. Every grave had flowers on it, flowers the people had purchased and laid on graves. It was very moving. You'll find the Korean people warm and helpful. If you like pottery check out Icheon Village.

Hi! I'm sorry that I have to write in Korean. (I have my 3yr boy who's not letting me do anything more than 5mins lol)
But if you google that in Korean, it will show in English automatically.
Restaurants you should try
명동교자
안동찜닭 or 봉추찜닭
Ashley (all you can eat)
마실 한정식(inexpensive Korean traditional course menu)
And try Korean style sashimi. It's not like Japanese ones. More amazing side dishes you will see. I recommend to do this in Pusan. But check the price thoroughly. Prices vary.
I will update more when I have time.

And one more place I'd like to add is Chuncheon. You can get there by taking a cheap train. It takes about an 1 1/2 from seoul. Day trip is fine. But there are nice pensions and activities.
남이섬

If a sports fan you have to go to a baseball game. Amazingly different experience. If into old culture, Gyeongju or Kongju (ancient capitals of Silla and Baekje Dynasty). The war memorial is worth a full day (all the history of war on the penninusla not just the UN Korean War). And Namdaemun.

Anyohasaiyo!
I spent 12 years teaching in Korea and loved exploring by car the back roads to the original villages searching the old traditions. You will find amazing temples like Bomosa in Busan. Some mountain temples serve vegetarian temple food for free! Beautiful walking paths through the pine trees along crisp clean rivers. Hire a taxi driver for the day and ask to go into the hills between Busan and Ulsan and go to Gyeongju to see Bulkuksa temple!
Make sure you check out the longest underground lava tunnel on Jejudo. Try mockoli drink and pajon!
