A lot can happen in a month. But, HK does have lovely, large national parks that you can hike in.

Like said above, it's a month away.
& If airlines are cancelling flights to Bali now,& there's still volcanic activity when you're going, they'll still cancel flights.
There won't be a plan B to get into Bali

There's many other countries you can connect to from Hong Kong with cathay pacific. Have you been to Thailand or Malaysia?

No and not wanting to go there this time around... the issue I am having is that everything is booked and paid for. I don’t foresee having to change my whole trip, I just might get delayed by a day or two and end up having a longer layover in Hong Kong. My plan B is not to rearrange my trip but find things to do and place to sleep while in Hong Kong but thanks for the suggestions, much appreciated

Well, how many extra days in HK if you're not going to Bali? It makes a difference whether you're going for three days or three weeks... I'm from HK so if you run out of places in HK to visit, I can tell you more!

I am hoping only until the flight resumed to Bali - if they are cancelled by then. Right now I am looking at one night only.

If it's only one night, it may not be worth it leaving the airport area. There should be some affordable overnight stays in the airport town called Tung Chung.
