Barcelo is great, its massive and has something for everyone.
Hotel Xcaret has snorkling on site and free access and transportation to all the X parks down there. It's a little pricier but when you look at what an excursion costs you understand why and see the great deal your getting. Its brand new last year and extremely eco friendly.
Sandos Caracol is another great resort. The thought process that went into ensuring this resort is eco friendly is exquisite. Plus there are 17 waterslides!!!

I 2nd Barcelo - snorkelling on site, and 4 differently priced resorts so those with big or smaller budgets can stay within easy walking distance of each other. Kids areas, etc.

I also got married at Bahia Principe but the Coba section. I second that they took really good care of us and it went off without a hitch. There is also an Adults Section now too I believe.
