East or west coast? It depends what level of activity you like.
Must sees imo: Fraser Island, Gold Coast, snorkel out of Cairns to Great Barrier Reef, the Rainforest Habitat in Port Douglas.
Sydney is awesome and beaches are great of course.
We loved driving the Great Ocean Road, time in Melbourne, Adelaide, Perth (stay in Fremantle- loved it!)

We stayed in Manly which is just a short ferry ride to Sydney. Highly recommend that. Great restaurants, shopping and a surfing beach. We flew to Cairns, rented a car and drove to Port Douglas to stay (4 mile beach). GBR snorkel tour with a company called Wavelength. Drive an hour to the Daintree Rain Forest - beautiful! We then flew to Uluru to hike the Kata Tjutas, and visit the camel farm. Loved it all.

Go down south to Jervis bay it’s about 3-4 hours south of Sydney. They were devastated by the fires and need some money back in the town. The beaches are stunning down there. The blue maintains is about an hour and a half west of Sydney, you can get some good sheepskin boots on the way!
Head north and drive 10hours to Byron Bay, the vibe here is amazing and the beaches are stunning. Live music everywhere and you might even catch a glimpse of chris Hemsworth! And hour north is the Gold Coast with some awesome theme parks and head further north another couple of hours to Fraser Island. Stick to the east coast of the island but beware with swimming! Catch a plane to cairns pronounced cans and go see the barrier reef.
Hope that helps! Happy to answer any questions I grew up near the blue mountains, holidayed I’m the south coast and lived in byron bay for years before moving to the comox valleys
