Traveled around Southeast Asia 2 years ago and found that AirAsia typically had the cheapest flights. Didn't spend too much time in Vietnam and Cambodia, only went to Siem Reap and Ho Chi Minh. For Vietnam, I believe you can now get the visa on arrival. In HCM the Chu Chi Tunnels are pretty interesting to check out. For Cambodia, if you bring US currency make sure they're not folded or torn because they're really picky and may refuse it. If you check out Angkor Wat it's a fun to take a tuk tuk around to the different temples. If you're taking the night train in Thailand, they can get pretty rough...I don't know how anyone could get any sleep. If you have any specific questions, let me know.

Check out airasia asean pass you will get 10 - 20 credits and all flights has to be booked 14 days in advance starts at 100 usd. It has a sample in the site on how you can use the route wisely. As for the vietnam visa get it in asia should be so much cheaper. I got mine here in Vancouver and costs twice as much. As stated above about usd bring some the visa applications have to pay in usd. Without it and paying in other currency will cost more.

If you love beaches I suggest Phu Quoc! Amazing secluded beaches all to yourself if you take a motorbike to the more remote areas

Second Phu qouc! Great seafood and cool dogs that are only on this island. Kind of like a combo between a lab and and a ridgeback, lovely sweet dogs.
