I can definitely answer a lot of your questions for you! I'm heading back to Kauai for my second time in a few weeks.
We're going back to one of the best airbnbs I've ever stayed at. It's a shared home with multiple suites and has an outdoor living room, hot tub, indoor living room and kitchen, free breakfast food and a garage full of things you can borrow like a cooler, snorkel gear etc etc.
Here is a link to their only family suite, it sleeps 4 and all the others are bedrooms with 1 bed for 2 people. I'll link them as well.

Kauai has amazing hiking trails on Waimea canyon. We did the Awa'awapuhi Trail and at the end you get to a very narrow part that if you're brave enough to go down, will give you spectacular views of the napali coast. You can dangle your feet 5000+ feet above sea level and look down at helicopters giving tours. It's truly breathtaking.
Look up trails on Waimea canyon as there are at least 3 others that also go in the direction of the napali coast. We're going to do the Kalepa Ridge one this time around.
There's also a few cool looking trails heading was toward the canyon itself and to a waterfall.

You'll need at least 4 days to explore kauai. Some other cool things to do while there -
Rent a kayak at Wailua river and take it to Secret Falls. It's a dope waterfall you can only get to by kayaking then a short hike. You can swim in the waterfall too! (don't do the tour it's a waste of money, you can do it all ok your own).
Adopt a dog for a day at the Kauai Humane Society (check their site and research before just showing up).
Go tubing down an old irregation river into tunnels with Kauai BackcountryAdventures
Check out queens bath, the lighthouse and turtle cave in the northeast part of the island.

Michael thanks so much for this. Just getting home now and will be researching everything that you’re suggesting. The family suite you’re recommending looks great but we need a suite large enough for at least 6 (maybe more) people.

Dru Barbaza the property is someone's home and has multiple suites. So you can rent the 4 person one and as many of the 2 person suites as you want as well. All the suites are right beside each other. 4 person one is the only one on the lower level.
It's perfect for large groups

We stayed in Lihue and found it was a great base for exploring and much more cost effective than staying on the north shore.

Dru Barbaza we booked so last minute we didn’t have a lot of options. We stayed at Banyan Harbor. Was great except our room was too close to the road. Would stay again, just farther back
