I travelled Cambodia, Vietnam and Philippines as a solo female back in April/May 2014 and it was very easy to meet new people and get around (no need to book an organized tour). You’d have to check Covid restrictions and which SE Asia countries are currently open for tourism. I imagine there would be way fewer travellers right now to meet along the way. So it would be a different experience but would highly recommend any SE Asia countries as places to visit.

Panama is safe, pretty predictable, quite varied for a small place. You have everything from one of the world's most cosmopolitan cities, to Indingenous administered territories where they welcome limited tourism. You can hike up a volcano or sun on a condo balcony overlooking a white sand beach. We quite liked Isla Taboga, population ~400, a 25 minute small ferry ride from Panama City. It is usually sunny (Panama City is wet in April ), has a couple of good beaches and quite safe. It is a nice place to start a trip.
