Too late now if you've already booked. If you haven't booked, then book an open jaw ticket. Some airlines encourage stopovers, singapore airlines in Singapore, Fiji in Nadi, japan airlines, I think Icelandic Air as well and a few others. A great way to promote tourism. Stopovers are free or very cheap (ie. $100).

Sorry this is the first time I've done something like this. How exactly do I book a open jaw ticket? For example on kayak I want to go to Tokyo and there is a cheap ticket with a layover in Taiwan which I also want to visit. How exactly do I stay in Taiwan for longer?

You just do a multi-city search, like this:
http://www.ca.kayak.com/flights?mc=y
(most airfare search engines have this, usually under 'multi city', listed beside roundtrip and one way)
And then search for:
Vancouver to Taiwan
Taiwan to Tokyo
Tokyo to Vancouver
The thing is though, the price can change drastically. When it stays the same as the roundtrip price it's usually because the airline(s) involved are essentially allowing a free stopover (often in their hub city). Such as how klm usually allows a free stop in Amsterdam.
It's much more common for the multiple stop ticket to be more expensive than the 'roundtrip version', even when all the same cities and stops are involved.

Can You Extend a Layover for a Couple of Days?

Layovers are a common occurrence when traveling by air, especially for long-haul flights or routes with multiple connections. While most travelers view layovers as an inconvenience, some savvy travelers see them as an opportunity to explore a new destination, even if it's just for a short time. But what if you want to extend your layover for a couple of days to really dive into a new city? Is that possible, and how do you go about it?

Yes, You Can Extend Your Layover!

The good news is that it is indeed possible to extend your layover for a couple of days, allowing you to turn a potential hassle into a mini-vacation. Airlines understand that some travelers may want to make the most of their layover, and they often offer options to accommodate this desire.

How to Extend Your Layover

Here are the steps you can follow to extend your layover when booking your flight:

  1. Book a Multi-City Flight: When searching for flights on an airline's website or a travel booking site, look for the option to book a "multi-city" or "multi-destination" flight. This option allows you to specify multiple stops on your journey, effectively creating a layover at your desired destination.
  2. Choose Your Layover City: Select the city where you want to extend your layover and the desired length of stay (e.g., 2-3 days).
  3. Adjust Your Travel Dates: Modify your travel dates to accommodate your extended layover. For example, if your original flight had a 6-hour layover in Paris, you can adjust the dates to have a 3-day layover instead.
  4. Book Separate Flights: In some cases, it may be more cost-effective to book two separate one-way flights instead of a multi-city flight. This allows you to create your own layover and potentially take advantage of different airlines' fares and schedules.

Things to Keep in Mind

  • Check for Visa Requirements: If you plan to leave the airport during your extended layover, make sure you have the necessary visa or entry requirements for the country you'll be visiting.
  • Book Accommodation: Since you'll be staying longer than a typical layover, you'll need to arrange accommodation for your extended stay, such as a hotel or Airbnb.
  • Consider Baggage Handling: If you're checking bags, be aware of any baggage restrictions or fees associated with your extended layover.
  • Check for Flight Changes: Monitor your flight schedules closely, as delays or cancellations can impact your extended layover plans.

By following these steps, you can turn a mundane layover into an exciting mini-adventure, allowing you to explore a new city and make the most of your travel experience.
