Anywhere along Highway 3 (Hope to Osooyos) is great, lots random spots to sleep and easily accessible rivers/lakes. Then you get to explore the Okanagan Valley
Edit: Then once you did the valley, up north of Vernon is Salmon Arm with a magestic lake surrounded by cliffs. From there you can either go east towards Banff or west towards Kamloops/Vancouver
