We did that in May. We used Norwegian to fly to Spain. We also used Alitalia to fly to Italy out of Spain. Alitalia was great to fly with but horrible to speak with if you have issues with your tickets and need to speak with an agent.

flying in and out of paris is pretty good too as france as really cheap buses to spain. some train deals too. Its a good option if you have more time.
